I like to serve it simply with a buttery dressing, like I did here. Just throw some veggies and chickpeas in a pan or paneer, if you fancy something different , with some tomatoes and spices.

Now just to get more people on the bandwagon, myself included. I would love more people to get on the bandwagon! Last week we had a leek and broccoli pasta bake; a mushroom risotto; shakshuka with home-made flatbread; and I forget what else. I'll often add basil or thyme to the mixture as it cooks, and sometimes I'll use a piece of bread to mop up any cheese or tomato juice that's been left behind.

Cauliflower and chickpeas are two of my favorite vegetarian ingredients to roast—sun-dried tomato pesto brings them together and makes them even better. You can certainly substitute any kind of cooked grain here, but wild rice works best, since most bags you buy at the store contain several different grains of rice and lend multiple textures for the price of one.
